Ingredients

  • All-Purpose Flour – 2 cups
  • Pumpkin Pie Spice, or Cinnamon, Ground Ginger, and Ground Cloves – 1-1/2 teaspoons pumpkin pie spice, or 1 teaspoon cinnamon plus 1/4 teaspoon ground ginger and 1/4 teaspoon ground cloves
  • Baking Powder 62712 1-1/2 teaspoons
  • Baking Soda 66552 3/4 teaspoon
  • Salt – 1/2 teaspoon
  • Pumpkin Puree – 1 can (15 ounces)
  • Granulated Sugar 53572 1-1/2 cups
  • Vegetable Oil – 1/2 cup
  • Eggs – 3
  • Mix-Ins (such as chopped nuts, raisins or chocolate chips, optional) – 1/2 cup

Instructions

Prevent your screen from going dark as you follow along.

  1. Preheat oven to 350°F. Prepare loaf pan with vegetable pan spray.
  2. In large bowl, combine flour, pumpkin pie spice, baking powder, baking soda and salt; set aside.
  3. In medium bowl, whisk together pumpkin, sugar, vegetable oil, and eggs until smooth.
  4. Add pumpkin mixture to flour mixture, stirring until just combined. Fold in mix-ins, if using.
  5. Pour into prepared loaf pan. Bake 65-72 minutes, or until toothpick inserted in center comes out clean.
  6. Cool in pan on cooling rack 15 minutes; remove from pan and cool completely.
