作法

  1. 奶油、鹽及糖粉用打蛋器打至乳霜狀。
  2. 加入全蛋繼續用打蛋器攪拌均勻。
  3. 加入過篩的低筋麵粉,將工具換成刮刀,攪拌成團。
  4. 將麵團用保鮮膜包起,冷藏30分鐘。
  5. 冷藏後將麵團平分成7等分。
  6. 底部插洞,以160°C 約12分鐘將塔皮烤熟,放冷備用。
  7. 將鮮奶油、蜂蜜、砂糖和海鹽用鍋子煮至120°C的溫度。
  8. 加入奶油混合。
  9. 倒入烤過的夏威夷豆及蔓越莓乾攪拌均勻。
  10. 將完成的內餡平均舀到烤熟的塔皮裡,略為整形即完成。
  11. 再放入已經預熱至180°C的烤箱中烘烤10-12分鐘。
  12. 完全涼透即可脫模,馬上密封避免回潮。
