Bake Mode

Prevent your screen from going dark as you follow along.

  1. (Prepare the Dough) In a large bowl, combine flour, salt, and yeast.
  2. Add warm water and stir until a shaggy dough forms.
  3. Cover the bowl with plastic wrap and let dough rise at room temperature for 10 hours.
  4. (Preheat the Oven) Preheat oven to 450°F (230°C).
  5. Place a 4-quart Dutch oven (without lid) into the preheated oven for 30 minutes.
  6. (Shape the Dough) Turn the risen dough onto a well-floured surface.
  7. Using floured hands, gently form it into a ball.
  8. Cover loosely with plastic wrap and let rest for 30 minutes.
  9. (Bake) Carefully place the dough into the heated Dutch oven.
  10. Cover with lid and bake for 30 minutes.
  11. Remove the lid and bake for an additional 12 minutes, until golden brown.
  12. Remove from the oven and cool completely before slicing.

Customisation Options
Seeded Loaf
1. Mix ½ cup sunflower seeds, 2 tablespoons sesame seeds, and 2 tablespoons poppy seeds into the flour before adding water.
2. Just before baking, mist the top of the dough with water and sprinkle with the remaining seeds.
Herbed Loaf
1. Add fresh herbs and Parmesan (if using) to the flour mixture before adding water.
2. Before baking, sprinkle the top with large sea salt flakes for extra flavor.
Orange Cranberry Loaf
1. Soak dried cranberries in the orange juice and hot water mixture for 15 minutes.
2. Add the cranberries, soaking liquid, orange zest, and brown sugar to the flour before mixing.
3. Before baking, sprinkle the top with sparkling sugar.

If using active dry yeast, dissolve it in warm water before mixing with flour.
