作法

  1. 先將中種材料用攪拌機打成團,然後靜置30分鐘後放置冰箱冷藏一晚。
  2. 隔日將中種及所有材料(除了奶油外)全部攪打至麵團成光滑狀(大約打5-10分鐘),再加入奶油至完全混合,麵團拉起有薄膜,將麵團取出後滾圓放置50分鐘發酵至原來的兩倍大即可。
  3. 將發酵好的麵團分成5個,每個120g,再將麵團揉圓後靜置20分鐘。
  4. 20分鐘後將分割好的麵團桿開,向內收成圓柱型,收口部分一定要捏緊,放置烤盤上,繼續後發大約50分鐘後,發到原本約2倍大即可。
  5. 發酵完成後,在麵團表面擠上卡士達醬。
  6. 以上火190°C,下火180°C約烤18~20分鐘。出爐麵包敲一下,待麵包放涼,切半擠入奶露餡即可。

作法

  1. 將室溫軟化奶油加糖粉打發,顏色會變淺。
  2. 之後打發鮮奶油並分次加入奶油拌勻,再混合奶粉即可。
