  • 200231 奶粉 (RedMan Full Cream Milk Powder) 7g
  • 12294 高糖酵母 (RedMan Instant Dry Yeast 11 G) 4g
  • 雞蛋 (RedMan Egg) 30g
  • 68328 無鹽奶油 (RedMan Unsalted Lactic Butter) 35g
  • 湯種 (Tang Zhong) 25g
  • 水 (Water) 110g

作法

  1. 將所有材料除了奶油之外,放入攪拌缸中以低速3分鐘,快速5分鐘攪拌,完成後取出少許麵糰拉開,出現薄膜且破洞有鋸齒狀。
  2. 加入奶油,低速3分鐘,快速2分鐘混合均勻後,拉開薄膜破口處呈圓滑狀即完成,將麵團取出放入發酵箱。
  3. 基本發酵1小時後,工作台撒上一些麵粉,防止沾黏,將麵糰分割成每個80克,之後滾圓放在烤盤上繼續二次發酵60分鐘。
  4. 之後將麵糰,以上火220°C,下火190°C,開蒸氣4秒,烤10~12分鐘即可移到網架上冷卻。
