作法

  1. 加牛奶和酵母先行混合後倒入攪拌缸
  2. 加入麵粉繼續攪拌成團
  3. 靜置一個小時或者冷藏隔夜發酵

作法

  1. 將所有材料除了奶油、湯種、核桃、起士之外,全部都丟進攪拌缸裡混合攪拌,大約慢速2分鐘,快速3分鐘
  2. 稍微有筋度的時候加入湯種繼續攪拌,大約慢速1分鐘快速2分鐘
  3. 加入奶油慢速1分鐘快速2分鐘
  4. 麵團出筋,能拉成薄膜狀即可加入核桃和30g起士丁,混合均勻後起鋼
  5. 整形成圓形進行基本發酵45分鐘~1小時
  6. 發酵完成後將,麵糰取出,拍扁,包入剩下的起士丁,整形成圓形,進行第二次發酵
  7. 大約一個小時後,表面撒上麵粉,割十字花紋,即可進行烘烤

  1. 將水煮沸後倒入攪拌缸裡
  2. 迅速倒入麵粉進行攪拌即可
  3. 冷藏一夜後隔日使用
