Our recipe is for the soft kind, made nicely chewy thanks to the use of Unbleached Bread Flour. Melted butter brushed over the crust is a bonus street vendors don't offer!

  • 102925 法國粉 (BLUE JACKET BAGUETTE FLOUR) 250g
  • 1416 細砂糖 (RedMan Fine Sugar) 8g
  • 58415 海鹽 (RedMan Sea Salt) 5g
  • 12294 高糖酵母 (RedMan Yeast) 4g
  • 68328 無鹽奶油 (RedMan Unsalted Lactic Butter) 15g
  • 水 (Water) 140g

配料

  • 10681 白芝麻 (RedMan White Sesame) 適量
  • 10682 黑芝麻 (RedMan Black Sesame) 適量
  • 58416 粗海鹽 (RedMan Sea Salt) 適量

鹼水

  • 10562 鹼水 (RedMan Alkaline Water) 250g

Bake Mode

Prevent your screen from going dark as you follow along.

作法:

  1. 所有材料以低速混合3分钟,中速5分钟,混合均匀。
  2. 搅拌完成后立即分割成适当大小,滚圆,发酵30分钟。
  3. 将面团搓成40~50 cm长条,中间粗,两端细,交叉整型成蝴蝶结状。
  4. 最后冷冻定型发酵30分钟。
  5. 使用烘焙碱水浸泡,放入面团,浸泡10秒后沥干排盘(烤盘要铺烘焙纸)。在面团粗端画一刀,刀口附近撒上粗盐或装饰芝麻。
  6. 入炉,以220°C烤15-20分钟。
